The Future of Food: A Sneak Peek at What’s Coming
The inspiration behind the "Future of Food" series comes from Synthesis' Menu 2034 research, a cutting-edge study that predicts how global shifts will shape our diets in the coming decades. The research explores two potential scenarios: one where we turn to regenerative agriculture and native ingredients to feed the future, and another where technology and science revolutionize food creation, introducing lab-grown meats, edible insects, and protein from the air.
This partnership aims to spark critical conversations around food sourcing, stretching, and nutritional innovation, preparing the Food and Beverage industry for the challenges ahead. What better way to experience the future of food than by tasting it? Each seminar and the symposium will feature menus inspired by future-food ingredients. Think cultivated meats, protein harvested from the air, and chocolate and coffee made without beans. These innovative dishes will be available at various venues around New Bahru during the Singapore Weekender from 12 to 17 March 2025, giving the public a chance to sample the ingredients of tomorrow.

Matthew Evans – Chef, farmer, and TV host of The Gourmet Farmer from Australia, known for his advocacy of sustainable food practices.
Eelke Plasmeijer – Dutch chef and co-founder of Bali’s award-winning Locavore and its innovative offshoot Locavore NXT, which combines a distillery, farm, and research lab.
George Peppou – CEO of VOW, an Australian company pioneering cell-based meats.
Nithiya Laila – Culinary anthropologist and advocate for indigenous Asian plants, co-founder of SG Seed Exchange.
Enzo Acerbi – Co-founder of Vertical Oceans, leading the charge in sustainable urban aquaculture in Singapore.
